we have 2 types of proteins:

in-house fermented mushroom mycelium

Also known as My Mycelium.
Mushroom roots fermented via liquid fermentation and Proprietary Post Processing for improved functional properties (texture, taste, nutrition).

in-house modified plant protein blends

Plant proteins which are modified (physically, enzymatically and biochemically) to increase functional properties such as gelling, emulsification, etc.

Process of Generation and Modification

1. Selection of mushroom strains

We select the right species based on desired properties such as sensory and nutritional characteristics

2. Fermentation of mycelium

It is grown between 4 to 10 days in an enclosed and controlled bioreactor to provide clean and optimal conditions for growth

3. Proprietary post-processing

My Mycelium undergoes an in-house processing to further improve its functional properties, such as texture, emulsifying properties, etc

Nutritional Information

in 100g of My Mycelium, there is about 7g of proteins, 5g of fiber and 0g fats.
